Tired of the same old lunch?

I love to enjoy a nice, big salad for lunch. However, it can get boring eating the same old thing every day. This recipe is a quick, easy and healthy salad with a fun twist!

Greek Salad with Pita Croutons

1 whole grain pita
1 lemon, juiced
1 tablespoon olive oil
1 clove garlic, minced
salt and black pepper to taste
3 cups chopped romaine lettuce
1/2 cup chopped cucumber
1/2 cup chopped tomato
1/2 cup chopped red sweet pepper
2 tablespoons reduced-fat feta cheese
1/2 cup canned chickpeas, rinsed and drained
2 tablespoons chopped kalamata olives

1) Place pita on baking sheet and toast in a 350 degree oven for 8 minutes or until crunchy. Chop into bite sized pieces.
2) In a small bowl, whisk together lemon juice, oil, garlic, salt and pepper.
3) In a serving bowl, toss together remaining ingredients, dressing and pita pieces. Makes 4 servings.
