Pre-Game for the Super Bowl

With Super Bowl Sunday approaching, I like to get as much cooking done in advance as possible. That way the day of the party I can sit back, relax and enjoy the game. (Well, to be honest...the commercials!) Today I made a batch of snack mix to put out for our Super Bowl Party. It is a spicy twist on the classic Chex Mix!



Spicy Asian Snack Mix

6 cups Wheat Chex
1 ½ cups sesame sticks
1 ¼ cups dry roasted peanuts
¼ cup unsalted butter
3 Tablespoons teriyaki sauce
2 teaspoons dark sesame oil
2 teaspoons sugar
1 teaspoon hot salt (Morton’s) or ¾ teaspoon salt plus ¼ teaspoon cayenne pepper
1 ½ cups wasabi peas

1. Heat oven to 250 degrees. Coat a 15 x 10 x 1-inch baking pan with nonstick cooking spray. In a large bowl, toss together wheat chex, sesame sticks and peanuts.

2. In a medium-size glass bowl or measuring cup, combine butter, teriyaki, sesame oil, sugar and salt. Microwave on HIGH for 45 seconds or until butter is melted. Pour over mixture in bowl, and toss to coat.

3. Transfer cereal mixture to prepared pan and bake at 250 degrees for 1 hour, stirring every 15 minutes.

4. Cool mix in pan on wire rack for 15 minutes. Stir in wasabi peas.
